CEiMB: Sloppy Joes


This week's CEiMB, Sloppy Joes, was chosen by Chaya.  We love sloppy joes and they are always a welcome dinner.  I liked this recipe because it was more spicy than what I typically make with the addition of the jalapeño.  I also loved the pinto beans!  We typically serve our sloppy joes over sweet potatoes or spaghetti squash so I opted to switch out the wheat buns.   I made a few changes so I included my version below.  This is a great weeknight meal, thanks Chaya for the pick!

Sloppy Joes

1 lb of ground turkey breast
2 TBS of olive oil
1 medium onion, diced
4 cloves of garlic, minced
1 jalapeño pepper, minced
1 red bell pepper, diced
1 15oz can of pinto beans, rinsed and drained
1 15oz can of tomato sauce (Muir Glen)
2 TBS of tomato paste
1 TBS of red wine vinegar
1 TBS of molasses
1 TBS of Worcestershire sauce
1 tsp of dry mustard
1 tsp of salt and pepper
2 sweet potatoes, halved and roasted until soft

In a large sauté pan, heat the oil over medium heat.  Add the turkey and start to break-up.  After 4 minutes add the onion, bell pepper, jalapeño, and garlic.  Cook for 5 more minutes.  Add in the beans, tomato paste, vinegar, molasses, Worcestershire sauce, mustard, salt and pepper.  Stir well and bring mixture to a simmer.  reduce heat to low and simmer for 5-8 minutes until the sauce starts to thicken.  Mash 1/2 a sweet potato on a plate and spoon sloppy joe over the top.  Serve and enjoy!

  1. I used turkey, too! The sweet potato switch is a great idea; I may have to try that sometime! Looks like it turned out scrumptious.

  2. I love your idea of serving over pasta. I may have to try that. I've never heard of using sweet potatoes with these. Great photo. We loved these sloppy joes!!
