Old favorite, new twist


We love, love, love sloppy joes in my house.  Not your average, boring canned sloppy joes but fresh, homemade ones.  It is a recipe I found years ago and have fined tuned ever since. 

1 1/4lb of lean ground beef
1 TBS of olive oil
2 TBS of brown sugar
1 TBS of grill seasoning
1/2 tsp of salt
1/2 tsp of ground pepper
1 tsp of ground chipotle peppers
1 diced red bell pepper
1 diced onion
2 TBS of red wine vinegar
3 TBS of tomato paste
1 14oz can of diced tomatoes, blitzed in the food processor

Brown the beef in a large skillet with the oil.  Once almost brown add the spices and sugar.  Mix well and then add the onion and peppers.  Cook until soft.  Then add the vinegar and tomato paste, mix well.  Add the diced tomatoes and simmer for 5 minutes more.

Usually we have this over toast.  I decided to try something new though.  I roasted spaghetti squash and shaved into beautiful strands.  We used this as our base for the sloppy joes.  It was great!  The squash soaked up the sauce well and was better for us that a slice or two of bread.  I think I am hooked on spaghetti squash!  Enjoy!

  3. I never understand why people open a can of manwich, when you can make it homemade so easily. This looks really good, and I love the idea of eating it over spaghetti squash.
