Sweet Potato and Raisin Muffins
















I am so excited about this recipe.  It is ridiculously easy, uses great ingredients, and boasts about 250 calories per muffin.

I had one for breakfast today, I had a good day.  There MUST be a correlation at least!


Sweet Potato Muffins

2 cups of sweet potatoes, cooked and peeled
3/4 cup of maple syrup
3 TBS of canola oil
1 egg
2 cups of whole wheat flour
1 tsp of baking soda
1/4 tsp of salt
1/4 tsp of ground ginger
1/4 tsp of ground cloves
1 tsp of cinnamon
1/2 cup of raisins
1/2 cup of chopped walnuts

Preheat the oven to 350degrees.  Line a muffin pan with liners, makes 12.  
Add the sweet potatoes, maple syrup, oil, and egg to the bowl of a food processor.  Process until smooth.
In a large bowl, sift together the flour, soda, salt, ginger, cloves, and cinnamon.  Stir in the raisins and walnuts.  This step will keep the raisins and walnuts from dropping to the bottom of the muffin.  Add the sweet potato mixture to the dry ingredients.  Combine well.  Scoop into muffin pan.  Bake for 30-35 minutes or until tops start to brown and an inserted toothpick comes out clean.  Cool on a wire rack.  Enjoy!
