Comfort Food

Squash is really special to me.
























I know that may sound silly but butternut squash is my ultimate comfort food.  I am immediately taken back to my childhood when butternut squash is roasted with maple syrup.


What I really love is that both my mother and grandmother adore maple butternut squash too!  This makes it a staple at both their tables and cements it as one of my fondest food memories!

Maple Butternut Squash

1/4 cup of maple syrup (the real stuff, no substitutions)
1/4 tsp of black pepper
3 TBS of olive oil
1 medium butternut squash, diced to 1" pieces

Preheat the oven to 400degrees.  Put the squash in a baking dish. Whisk together the maple syrup, black pepper, and olive oil.  Pour this mixture over the squash and combine well.  Bake for 40 minutes, stirring occasionally.  The squash is done when it is soft and the edges begin to caramelize.  Enjoy!
