Spicy Salmon


Fish is such a great weeknight option since it goes together so quickly.  It also fits into our attempt to eat more... well...Fish.

I find that salmon needs STRONG flavors.  It always tastes better to me when paired with big flavors, something like chilies.

This is a simple Ellie Krieger recipe.  I really loved it and will definitely be making it again soon!

Salmon with Sweet & Spicy Rub
adapted from The Food You Crave

2 TBS of dark brown sugar
1 TBS of ancho chili powder
1 tsp of ground roasted cumin
1/8 tsp of black pepper
3- 6oz salmon fillets, rinsed and dried

Preheat the broiler.  In a small bowl, combine the sugar, chili powder, cumin, and black pepper.  Rub 1 TBS of the rub into the top of each fillet.  Place on a foil lined sheet pan.  Place under the broiler for 8-10 minutes for medium  Serve immediately.  Enjoy!

*On a side note, I sprinkled the leftover rub over baked sweet potatoes.  Delicious!!

  2. I've made this salmon before and it's awesome! I like that you used ancho! (that's the adaptation right??) I love playing with chili powders!
