Roasted Pork Tenderloin with Red Pepper Sauce


We love pork tenderloin.  It is lean, delicious, and lends itself to so many flavors.  This recipe is one I saw on an episode of Giada at Home.  It was simple and timed well for entertaining.  We had enjoyed this with meal family, it was great!

Roasted Pork Tenderloin with Red Pepper Sauce

2- 1.5lb pork tenderloin
salt and pepper
3 TBS of olive oil
2 red bell peppers, chopped
1 orange bell pepper, chopped
1 medium onion, chopped
3 cloves of garlic, minced
2 TBS of smoked paprika
1 cup of dry red wine
2 -10oz cans of tomato puree
 1 bay leaf

Heat 2 TBS of olive oil in a large dutch oven over medium high heat. Season the pork with salt and pepper.  Sear the pork tenderloin for 4 minutes on each side.  Place the tenderloins in a baking dish in a 350 degree oven for 35-40 minutes or until an internal temperature reaches 155degrees.  Remove from the oven and tent for 5 minutes.  Slice into thin pieces against the grain and place in a serving dish.
While the pork is in the oven, add the remaining 1 TBS of olive oil to the hot dutch oven.  Saute the onions and peppers for 8-10 minutes until soft.  Add the garlic and paprika then cook for another 2 minutes.  Add in the wine and bay leaf, be sure to de-glaze the plan at this point..  Simmer for 5 minutes and then add in the tomato puree.  Simmer for another 25-30 minutes. 
Spoon the sauce over the pork medallions in the serving dish.  Enjoy!
