Spicy Stuffed Chicken with Sage and Goat Cheese


I have already confessed my obsession with stuffed chicken breast and goat cheese.  This dish was super simple to prepare and really good.  

The relish I used is Wickle's.  I found in the grocery store and love the tangy vinegar flavor paired with the heat of the peppers.  It also happens to be a condiment found in my parent's refrigerator.   

Spicy Stuffed Chicken Breast with Sage and Goat Cheese

3 -1/2lb chicken breasts
salt and pepper
2 TBS of fresh sage chopped
2oz of goat cheese
4 TBS of spicy relish (Wickle's Hoagie and Sub Relish)
1 TBS of olive oil

Place each chicken breast between two pieces of wax paper.  Gently pound out the chicken breast to be about 3/4 inch thick.  Make a pocket along the entire the chicken breast .  Season each breast with 1/4 tsp of salt and pepper.  Combine the sage, 2 TBS of relish, goat cheese, and olive oil in a small bowl.  Add about 2 TBS of the mixture into each chicken breast pocket.  Top each breast with 1 1/2 tsp of relish.  Bake at 375degrees for 30 minutes.  Garnish with a sage leave.  Enjoy!
