CEiMB: Whole Wheat Pancakes

This week's CEiMB, Whole Wheat Pancakes, was chosen by dishin'.

I very rarely make a big breakfast unless we have guests that I know will appreciate it.  Therefore, I knew this recipe would be a treat one night this week.  Our typical routine is to enjoy our simple carbs during the day and have dinner be low on the glycemic index scale.  We by no means are "low-carb" people but we try to focus dinner on lean meats and veggies.  So, my husband was warned that one night we were going to have breakfast for dinner and that we would both need to get a good bike ride beforehand.



This dish was a treat indeed!  I was also pleasantly surprised that the apples and honey provided the only added sugar.  I think by not using cane sugar you were able to better taste the buttermilk and apples.  The pancakes were light.  I also thought the nut topping was great.  It added some texture and helped the meal to feel a bit more filling.  We both enjoyed the meal very much!

  3. The apples in the pancakes were lovely to bite into. I wish there were more - should have thought about using 2 apples instead of one.

    I couldn't leave the nut topping alone. So good!
    The pancakes were a treat for Ted's breakfast all week. He really enjoyed them. I nibbled since I'm not a pancake eater.

  4. What a beautiful picture! I'm not a big breakfast person, especially when it means putting in much effort in the mornings lol, but these pancakes look great. I think I'm going to have to make "brinner" soon to enjoy this recipe :)
