Red Onion Jam


I know it sounds strange.  Most people didn't exactly smile and say "yum" when I told them what I was making.  I will say though that I am considering making this my dinner tonight.  There is something about the sweetness of red onion that goes so naturally with the vinegar.

Beside what could be bad when it is topping Havarti on a baguette?

I saw this recipe on Brian Boitano's FN show.  He used it to make a amped up grilled cheese sandwich.  I thought it would be the perfect compliment to a cheese board for when friends were coming over.

Red Onion Jam

2 cups of red onion, peeled and sliced
3 TBS of olive oil
1/2 tsp of salt
3 TBS of brown sugar
1/4 cup of red wine vinegar

Heat the olive oil over medium-low heat in a large sauté pan.  Add the onions and garlic.  Cook 10-15 minutes until the onions are really soft.  Add the sugar and vinegar.  Stirring occasionally, cook for 15-20 minutes until the onions caramelize.  Serve with cheese on a toasted crostini.  Enjoy!

    You HAVE to make the chocolate cobbler. It is one of the best things I have ever eaten!!! And yes, it's either a really good thing, or a really bad thing that the ingredients are things that are always on hand.
