Happy Halloween!


I know this is a couple days late but what can I say...

In my family Halloween was all about hanging out and enjoying the trick o'treaters.  We lit out Jack o' Lantern, the one all the way to the right, and hoped to have at least a couple kids.  We had NONE!  That means we have Reese's Peanut Butter Cups in the house....never good!  We did have a good dinner though!

I watched a 30 Minute Meals show that prepared a Halloween meal and it looked pretty good.  Check out the recipes here
 


This is my variation on Spinach Salad on Garlic Croutons.  I used this nutty bread with sunflower seeds in it.  I toasted the bread and topped it with a TBS or so of shredded Italian cheeses.  I then covered it with my Warm Spinach Salad minus the apples and cooked the spinach a bit.  These crostini disappeared once I uncorked a bottle of wine!


For dinner I made the Turkey Chili and Sweet Potato Shephard Pie.  I changed a few things though.  I added a splash of red wine to deglaze the pot before adding the stock.  I also mixed 2 TBS of flour with 2 TBS of stock from the pot to thicken the chili a bit.  For my mashed sweet potatoes I used 2 TBS of butter, 1/3 cup of nonfat plain yogurt, and 1/2 tsp of ground chipotle pepper.  I then put the sweet potatoes over the chili, topped with only 1/2 cup of cheese, inside my dutch oven and baked it in there.  It really was a comforting dish.  The color also screamed Halloween!
