A kind invitation

A close friend and her boyfriend invited us to dinner last night.  It has been a really crazy week where a quiet evening with friends was just what we needed.  She offered to make an appetizer and dinner.  I added apple crisp for dessert!

We had this AMAZING bruschetta first.  Unfortunately we ate it all before I was able to get a picture.  It is a warm version of bruschetta.  First slice a baguette and make crostini.  Once crisp, top each round with a slice of tomato and a piece of fresh mozzarella.  Bake until the cheese melts.  Top each round with a fresh basil leaf.  Trust me, this is the most amazing small bite!  You have to try it! 

We had pan seared pork chops and brussel sprouts for a main course.  I love pork chops, especially when they are breaded and crisp!  If you are keeping up, I don't love brussel sprouts BUT now I do.  This recipe was awesome.  They were not bitter at all.  I enjoyed them tremendously!


I made apple crisp topped with Caramel Delight ice cream for dessert.  I used Spy apples peeled and sliced thin, mixed with 2 TBS of wheat flour, 2 tsp of sugar, and 1/4 tsp of cinnamon for the filling.  My crisp topping is super easy.  Mix 1/4 cup of unsalted butter, 1/3 cup of whole wheat flour, 1/3 cup of whole oats, 1/3 cup of brown sugar, and 1/2 tsp of cinnamon in a mini-prep food processor until it looks like wet sand.  Sprinkle topping over apples and bake at 400degrees for 35-40 minutes.  Again, we ate it up before a picture was taken! Sorry!

    1 spice cake
    15oz. can of pumpkin
    2/3 cup of water
    Mix and bake at 350x20-25min.
    UMMMMMMMM moist and soft!!! A little frosting of confectionary sugar and a bit of water and vanilla is a perfect topper!!!
    I think this a a cooking lite recipe but I can't be certain!
