Strawberry Lemon Trifle

Somethings were made for each other.  Lemon seems to be one of those things that has many friends.  It pairs well with so many other ingredients: mint, pepper, garlic, white wine, basil, blueberries, and my favorite strawberries.  This trifle belongs on your table!

Super easy to prepare and is even better when made a few hours ahead of time.  Summer entertaining at it's finest!

Strawberry Lemon Trifle

2 cups of strawberries, diced
3 TBS of Limoncello
1/2 cup of seedless strawberry jam
1 large pound cake, cubed
2 cups of sweetened whipped cream (or non-dairy topping)
1 small jar of lemon curd

In a medium bowl, stir together the strawberries, jam, and Limoncello.  In another bowl, gently fold the lemon curb and whipped cream (or non-dairy topping) together.

In the bottom of a trifle dish, place 1/3 of the cubed pound cake.  Then layer 1/3 of the strawberry mixture over the pound cake.  Lastly, carefully spoon 1/3 of the lemon cream mixture over the strawberries.  Repeat twice more.

Cover with plastic wrap and place in the refrigerator for at least 2 hours.  Garnish with a lemon slice.  Enjoy!

  2. Spectacular! I love fruit trifles and I'm a devoted lover of lemon curd! Now I just need some company for an excuse to make this yummy dessert, otherwise I'll eat it all my self.
