Happy Halloween- Pumpkin Bread

Yesterday I found myself in my kitchen with cans of pumpkin, not knowing what to make.  I found a recipe for pumpkin bread with a caramel filling and one for pumpkin muffins.  I combined the two and this appeared.  It is very moist and has great pumpkin flavor.  It makes me want to be home making leaf piles and conjuring up costumes.  Hope you are doing something very fall this Halloween day or maybe celebrating a birthday.

Pumpkin Bread

3 cups flour
2 tsp of baking soda
2 tsp of baking powder
2 tsp of cinnamon
1/2 tsp of nutmeg
1/4 tsp of allspice
1/4 tsp of ginger
1/2 tsp of salt
2 cups of canned pumpkin
3/4 cup of sugar
1 cup of packed dark brown sugar
4 eggs
1/4 cup of vegetable oil
1 1/2 cups of low-fat milk
1/2 cup of chopped pecans
1/2 cup of gold raisins

Preheat oven to 350degrees and spray two nonstick loaf pans with cooking spray.  Sift together the dry ingredients (flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and allspice) in a medium bowl.  In the bowl of a mixer fitted with a paddle attachment, mix together the pumpkin and sugars.  Scrap down the sides once and mix again.  Add in the eggs, one at a time then add the oil.  Once mixed well, slowly add in the milk and dry ingredients, alternating between the two.  Once everything has been added, fold in the golden raisins and pecans.  Pour into the prepared loaf pans.  Bake for 55-60 minutes until an inserted toothpick comes out clean.  Enjoy!
