Cherry Chocolate Sorbet


One of my favorite summer produce items are cherries.  They are delicious right out of a bowl or as a cobbler.  I found this recipe for Cherry Chocolate Sorbet and knew it would end up making an appearance.  

Honestly the one thing that delayed me was that I kept forgetting to put the bowl of my ice creamer maker in the freezer.

The flavor is fantastic.  The consistency is not as soft as I would like.  I think the mixture contains a bit too much water which makes the sorbet hard and grainy.  So, reduce the water and start pitting some cherries; this is a great late summer dessert!

Cherry Chocolate Sorbet
adapted from The Essential Vegetarian Cookbook

2 cups of cherries, pitted
3/4 cup of sugar
1/2 cup of sifted unsweetened cocoa powder
2 cup of water
1 tsp of vanilla

Place the cherries in the bowl of a food processor and blend until smooth.  Combine in a medium bowl with the sugar, cocoa powder, water, and vanilla.  Mix well with a whisk being sure there are no lumps of cocoa.  refrigerate this mixture for 1 hour.  Add to the bowl (frozen) of an ice creamer make and prepare according to the manufacturer's instructions.  Enjoy!

I have a can of cherry pie filling...I am thinking using that with the cocoa, of course I'll have to adjust the water and sugar, I think it could work,without the pitting, I'll just chop up the cherries a bit. Ooo la la. Now don't tell how you know that I love big chunks of cherries in my frozen treat!
