Strawberry and Honey Bran Muffins

I saw these muffins at So Good and Tasty and knew I would have to try them.  I love strawberries and oddly enough bran.  I also think that bright pieces of fruit hidden inside a muffin is so tempting.



These muffins are pretty health conscious.  Only 2 TBS of oil for the whole batch and no processed sugar!  I was also able to put them together in under 10 minutes.

They came out of the oven with little pieces of strawberry peeking through the toasty tops.  I thought the sweetness of the strawberries was balanced perfectly by the nutty flavor from the bran.  A really great muffin!


Strawberry & Honey Bran Muffins
adapted from So Good & Tasty

1 1/2 cups of wheat flour
1 cup of oat bran
1 tsp of baking soda
1 tsp of baking powder
1/4 tsp of salt
1 cup of 1% milk
1/2 cup of local honey
3/4 cup of natural unsweetened applesauce
2 eggs, lightly beaten
2 TBS of vegetable oil
1/2 tsp of vanilla
2 cups of strawberries, diced

Preheat the oven to 400degrees.  In a large bowl, whisk the flour, bran, powder, soda, and salt.  In a separate medium bowl, combine the milk, honey, applesauce, eggs, oil, and vanilla.  Create a well in the dry ingredients and then add the wet ingredients to the dry all at once.  Stir to combine, being carefully to not over mix.  Fold in the strawberries.  Line muffin tins with paper.  Fill each cup about 3/4 full with batter.  Bake for 15-20 minutes or until a wooden toothpick comes out clean.  Cool completely on a wire rack.  Enjoy!
