Roasted Peppers, Goat Cheese, and Chive Stuffed Chicken

I never get tired of trying new flavor combination stuffed inside a chicken breast.  I love that I can prepare them ahead of time and pop them in the oven while I am finishing a work-out on a weeknight.  I also love how delicious they are!

This particular combination was great.  The dinner table was very quiet last night which my husband says is the best way to tell if a dish is good or not.  I loved the velvety consistency of the cheese with the sweet peppers.


Roasted Pepper, Goat Cheese, and Chive Stuffed Chicken

2 oz of goat cheese
3 TBS of roasted red peppers, diced
2 TBS of fresh chives, chopped
1/4 tsp of fresh ground back pepper
2- 8oz boneless, skinless chicken breasts
1 TBS of plain bread crumbs
1 TBS of grated Parmesan cheese

Preheat the oven to 400 degrees.  Combine the goat cheese, peppers, chives, and black pepper.  Fillet the chicken breasts in half and pound out gently.  Spread 1/2 the cheese mixture over 2 of the chicken breast halves.  Place the other half on top.  Combine the bread crumbs and Parmesan cheese.  Sprinkle this over the top of the chicken breasts.  Place on a baking sheet sprayed with cooking spray.  Cook for 30-40 minutes.  Enjoy!
