Onion, Goat Cheese, & Arugula Pizza

Recently, I joined a blog (CEiMB) dedicated to the recipes of Ellie Kreiger.  Each week a recipe is chosen for people to try and report on outcome.  This is my first attempt; Onion, Goat Cheese, and Arugula Pizza.



Right at the start, I messed up a bit.  This goes to show how important actually reading the recipe is!  I figured the name gives all the ingredients.  However, the "pizza" is actually wheat tortilla shells as opposed to the wheat pizza dough I used. It was a great mistake!  If you chose this alteration be sure to put the arugula on top a few minutes before the pizza is done or it will be very crisp as mine was.  The combination of goat cheese and carmelized onions was wonderful.  Give it a try, make it your own, and enjoy!

  3. I've done this with Ellie recipes so many times! I just sort of assume that when she says pizza she means pizza. I think that whole wheat pizza dough was a great way to go to make this a little more filling for dinner. I used the tortillas but ate my pizza for lunch. I didn't have arugula so I had to make some last minute substitutions but I still loved this pizza. Welcome to CEiMB! I'm glad you liked this pick.

  4. Hi! Welcome to the group. This looks like a pretty tasty variation on the recipe. We really enjoyed this one, too. I just don't think you can wrong with caramelized onions.
