Mediterranean Turkey Meatloaf

I know, Turkey Meatloaf?  But we all need something we can prep in the morning and toss in the oven quick when we get home.  It might not be glamarous but it is real life which can still taste good.



Mediterranean Turkey Meatloaf

1 1/4lb ground turkey breast
2 roasted red peppers, diced
1 box of frozen chopped spinach, thawed & drained
2 slices of Canadian bacon, diced
1/4 cup of crumbled feta cheese
3 TBS of dried bread crumbs
1 egg white, beaten
1 TBS of olive oil
1/4 tsp of crushed red pepper flakes
1/4 tsp of dried oregano
1/2 tsp of salt
1/4 tsp of cracked black pepper

Combine all ingredients in a bowl with a fork.  Be careful to not compact the mixture as this will make the meatloaf tough.  Prepare a loaf pan with cooking spray.  Bake in 375 degree oven for 40-45 minutes or until a thermometer reads 160degrees.  Enjoy!
