Warm Spinach Salad

Remember I mentioned before that I love curling up on the couch to watch Food Network on Saturday morning with a cup of coffee?  This dish was inspired by a morning filled with Food Network.  Not sure why but when I was putting together my menu for the week this dish came to mind.  We loved it!



16oz cremini mushrooms, sliced
1/2 tsp of pepper
2 tsp of fresh thyme, minced
1/4 lb of Canadian bacon, diced
1 large shallot minced
1 large Jonagold apple sliced
1 box of washed, fresh spinach
2 TBS of olive oil
1/2 tsp of salt
2 TBS of red wine

Heat oil in a large saute pan.  Add the mushrooms and pepper.  Cook until starting to turn brown.  Add the thyme and salt.  Add the bacon and shallot.  Once the shallot has started to soften, add the wine to deglaze the pan.  Cook until the wine has reduced by half.  Pour the warm mixture over the fresh spinach and sliced apples.  Enjoy!
