Sunday Brunch

Well, my husband has to work this evening which means no Sunday Dinner together.  So instead when we got back from church we had a Brunch at home.  I love quiet Sunday afternoons where I get to curl up with a good cup of coffee and catch-up on all the Food Network shows I missed in the past weeks.  Since it is cold and rainy again a Sunday Brunch at home fit perfectly into that plan.



We had frittata, chicken sausage, and cinnamon bagels.  I am a big fan of frittatas.  You get all the fluffy goodness you are looking for from an omlet but minus all the babysitting.  And who hasn't completely fouled the omlet flipping process!  :)  Here is my Frittata recipe!

1/2 red bell pepper finely diced
1/4 red onion finely diced
1 Roma tomato seeded and finely diced
1 TBS of olive oil
1/2 tsp salt
1/4 tsp black pepper
2 eggs
6 egg whites
1/2 cup of shredded lowfat chesse (an italian mix is best)
10 large fresh basil leaves sliced

Preheat the over to 400degrees.  Heat the oil in a 10' ovensafe, fry pan over medium high heat.  Saute the red pepper and onion for 3-4 minutes until soft, then add the tomato and cook for 2-3 more minutes.  Beat the eggs and egg whites with salt and pepper together until fluffy.  Lower the heat to medium to medium-low and add the eggs to the pan.  Let the mixture set-up for 1-2 minutes then stir to ensure even cooking.  Place the pan in the oven for 15minutes.  Once the frittata starts to puff up, remove from the oven to top with the cheese.  Place back in the oven for 5-8 minutes.  Let stand for 5 minutes beore slicing.  Top with basil and serve!

  1. oh that looks amazing! i've never made a frittata before but i've wanted to ever since i saw "The Family Stone" (which i think we actually watched together??)
