Bruschetta Stuffed Chicken

This recipe was passed onto me from a good friend at church.  She actually put together this great binder for me as part of my 30th Birthday gift that included recipes from friends and family.  It was very sweet!  One of her additions was Bruschetta Stuffed Chicken. 

It took maybe 20 minutes to prepare.  It took me longer than most because I really enjoy pounding out chicken breasts.  :)  A girl has to get her aggression out some way!  It also boasts about 300 calories per serving.  Enjoy!



1 14oz can of diced tomatoes (I love Muir Glen)
11/4 cup of shredded lowfat Italian blend cheese
1/4 cup chopped, fresh basil
6oz package of Stove Top Stuffing
2 lbs of boneless, skinless chicken breast
1/3 cup of Kraft Roasted Red Pepper Italian Dressing

Combine the tomatoes, 1/2 cup of cheese, basil, and stuffing, stir until moist.  Slice each chicken breast in half horizontally (Use a super sharp knife and be careful!).  Pound out each piece of chicken.  Place one half of each chicken breast in a baking dish and smooth a large spoonful of the mixture onto each one.  Place the other half of the chicken breast on top.  Pour the dressing over the chicken and bake at 375 degrees for 40 minutes.  Sprinkle the rest of the cheese over the top and bake for 5 more minutes.
