Mediterranean Chicken Burgers


Not sure what the weather is like where you live but here it's going to be ridiculously hot.  Which in my house means I hate turning on the oven.  I much prefer to mix up a good burger, smile nice, and hope my husband will be willing to man the grill!   


In my opinion, burgers made of chicken or turkey need some help in the flavor department.  This recipe uses some sheep's milk feta and strong spices to wake up this lean meat.  I enjoyed every bite and my oven never broke a sweat!

Mediterranean Chicken Burgers

1lb. of lean ground chicken
1/2 red pepper, finely diced
1 shallot, finely diced
3oz of sheep's milk feta, crumbled
2 tsp of Dijon mustard
1/2 tsp of dried dill
1/4 tsp of salt
1/4 tsp of pepper

Combine all the ingredients in a medium bowl.  Make sure not to compress the meat too much when mixing.  Form into 4 patties.  Set in the refrigerator for at least an hour or overnight.  Remove prior to grilling in order for the meat to come up to room temperature.  Place on a hot grill and then quickly lower the heat to cook the burgers slowly.  This will provide a much juicer burger.  Serve with a good hard roll, lettuce, and tomato.  Enjoy!
