Cumin Honey Sweet Potatoes


A simple dish that is a perfect compliment to almost any dinner.  It has a short ingredient list which includes one of my favorites, sweet potatoes!  I also thought it would be a great recipe to share before I leave for awhile.  


My husband and I are traveling to Southeast Asia for a couple weeks.  We decided to make this trip as simple as possible which means no smart phones, no laptop, and relying on Internet cafes.  

We are so excited about the trip!!  I suspect I will have great food to share with you and that it will provide me with TONS of inspiration in the kitchen.  I will miss you all but look forward to sharing my adventures with you once we are back.

Try these sweet potatoes!

Cumin Honey Sweet Potatoes

1 TBS of cumin
3 TBS of honey
3 TBS of olive oil
1/2 tsp of fresh cracked black pepper
3 sweet potatoes, peeled and diced

Whisk together the cumin, honey, olive oil, and black pepper.  Place the sweet potatoes pieces into a cast iron skillet.  Pour the cumin honey mixture over the potatoes and stir to combine.  Bake at 400degrees for 45 minutes, stirring occasionally.  Serve alongside your favorite grilled meat.  Enjoy!

  2. Southeast Asia is my favorite Asia! I absolutely LOVED Thailand and Cambodia, and am planning my next trip to Malaysia and Philippines.
    The food there is fantastic (if you can handle the spiciness). Enjoy the trip!
