Smoked Salmon Club

This sandwich was inspired by a recent trip to Miss Shirley's Cafe where I enjoyed Amy's Bagel.  It was a great breakfast and I was determined to re-create it at home.  


I made a few changes and am thrilled with the results.  I think it is a perfect sandwich but I will admit it is a bit much for one.  This might be one to share!  


I love the combination of the goat cheese and salmon.  I also opted to enjoy the flavors from the bagel instead of adding onions and capers.  

Smoked Salmon Club

1 Everything Bagel, sliced into 3 pieces
1oz of goat cheese
spinach leaves
2 tomato slices
2-3oz of smoked salmon

Toast the bagel slices.  Spread the goat cheese over the bottom and middle slices.  Then top each with a tomato slice, spinach, and smoked salmon.  Finish with the top of bagel, slice.  Enjoy!
