Pumpkin Oatmeal


I saw a recipe similar to this one and just loved the idea.  It sounded comforting and warm, perfect for a Saturday morning breakfast!  After my run this morning, I made a big pot of coffee and enjoyed every bite of this oatmeal!

Pumpkin Oatmeal

1 1/2 cups of water
1 1/2 cups of unsweetened almond milk
3/4 cup of pumpkin puree
1/4 tsp of salt
1/2 tsp of cinnamon
1/4 tsp of nutmeg
2 1/4 cups of rolled oats
2 TBS of brown sugar
3 TBS of sliced almonds, toasted

In a medium saucepan, whisk together the water, almond milk, salt, cinnamon, and nutmeg.  Bring to a boil and whisk in the oats.  Cook over medium heat whisking occasionally for 5-8minutes or until you achieve your desired consistency.  Serve in bowls, garnish with sliced almonds.  Enjoy!

    The baked apples stuffed with mincemeat and oats was wondrful. I mixed in 3-4 Tbsp. oats and water and let them sit for an hour or so before baking. It was so sweet!!
