Ellie Kreiger's Turkey Meatloaf

I am one of those odd folks who loves meatloaf.  I think it is classic comfort food and this recipe actually is my favorite meatloaf.  It also doubles into a great meatloaf sandwich....hey don't knock it unless you have tried it!

Give this recipe a try, I just know you'll love it too!

Mom's Turkey Meatloaf
adapted from The Food You Crave

3/4 cup of quick cooking oats
1/2 cup of 1% milk
1 medium onion, finely chopped
1 green pepper, finely chopped
2 lbs of ground turkey breast
2 large eggs, beaten
2 tsp of Worcestershire sauce
1/4 cup of ketchup
1/2 tsp of salt
1/4 tsp of fresh black pepper
1 cup of tomato sauce (I use Muir Glen)
1/2 an onion sliced

Combine the oats and milk then let them sit for at least 3 minutes while you are chopping.  Combine milk, oats, turkey, onion (chopped), green pepper, eggs, Worcestershire sauce, ketchup, salt, and pepper.  Mix well but be sure not to compress the meat too much as this will make the meatloaf dense.  Form the turkey mixture into a log 5inches wide and 2 inches high on a baking sheet.  Top with the tomato sauce and sliced onions.  Bake at 350 degrees for about 1 hour until a tester inserted into the center reads 160degrees.  Let the meatloaf rest for about 10 minutes before slicing.  Serve with roasted vegetables.  Enjoy!

  1. We love this meatloaf as well, I have made is numerous times and it always disappears, no leftovers for sandwiches. Probably should make 2 and hide one of them for sandwiches. Guys refuse to call it meatloaf, though, they call it turkey loaf to distinguish it from their favorite beef meatloaf recipe. There are requests for each at differing times. Yours looks great!
