CEiMB: Energy Bars



This recipe for Energy Bars my friends at CEiMB made a couple weeks ago.  It was actually a recipe I chose but in my busy life never actually posted it.  Sad I know!  

This recipe was ridiculously easy.  I made a batch on Sunday night and we enjoyed them as a breakfast snack all week.  They are not too sweet and do not at all resemble cardboard. :)

I swapped a few ingredients so I have included my recipe below.

Energy Bars
adapted from The Food You Crave by Ellie Krieger
1 cup quick cooking rolled oats
  • 1/2 cup raw unsalted sunflower seeds
  • 1/2 cup toasted wheat germ
  • 1/4 cup whole-wheat pastry flour
  • 1/2 cup dried apricots
  • 1/2 cup sliced almonds
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/4 cup of lowfat milk
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup pure maple syrup
  • 2 large eggs
Preheat the oven to 350degrees.  Prepare a 9"x13"baking pan with cooking spray.  Combine all the ingredients accept the milk, maple syrup, and eggs in the bowl of a food processor.  Pulse until the mixture is finely chopped.  Add in the milk and pulse to combine.  Add in the maple syrup and eggs.  Pulse until the mixture is a course paste.  Place the mixture in the prepared baking dish and spread evenly.  Bake for 20 minutes until lightly brown.  Cool for 15 minutes and then cut into 18 pieces.  Store in an airtight container.  Enjoy!


*On a side note, this is going to be my last post with CEiMB.  I find that I am too busy to ensure that I keep up each week and am focusing my cooking in a different direction.  It has been fun!  Thanks!
