Simple Supper

We had my cousin and his fiancée over for dinner last night.  All of us had a long week so we kept it super simple.

We roasted asparagus and sweet potatoes.  I made a big salad using field greens, red onion, cherry tomatoes, toasted walnuts, and avocado.  My husband cooked Italian sausage and chicken on the grill. I love a sausage sandwich dressed with red peppers and old fashion yellow mustard!  It screams summer is coming!

My husband and cousin enjoyed some great beer, La Fin du Monde and Orion.  While the beer looked delicious, the ladies enjoyed a Limoncello Martini.  This is a great summer cocktail!


Limoncello Martini

1 oz Limoncello
1 oz vodka
sparling water
lemon slices

Make sure all the ingredients are cold.  In a martini glass, add the Limoncello and vodka.  Add enough sparkling water to fill the glass.  Garnish with a lemon slice.  Enjoy!

We had a really great evening!  Our guests brought this amazing apple crisp.  Oddly enough, by the end of the evening we realized, we never had dessert! They were kind enough to leave some here so we could enjoy it later.  It was a great simple meal enjoyed with great company!
