Roasted Salmon with Shallot-Grapefruit Sauce

This is a recipe from Ellie Kreiger's The Food You Crave that I have been wanting to try for awhile.  I love grapefruit and salmon.  I also think that roasted salmon tastes best when it has a sauce of some sort.  Even my husband, who isn't a fan of mixing fruit with protein, liked this dish.  The honey in the sauce cut any tartness in the grapefruit and the shallot gave the perfect hint of garlic.  Great weeknight meal!



Roasted Salmon with Shallot-Grapefruit Sauce

4 6oz salmon fillets, rinsed and patted dry
1/4 tsp salt and pepper
2 ruby red grapefruits, segmented and juiced
1 medium shallot, minced
2 tsp of honey
1.8 tsp of chipotle pepper
2 TBS of lemon juice
3 TBS of fresh basil chopped
olive oil

Preheat oven to 350 degrees.  Place the fillets on a roasting pan prepared with cooking spray.  Sprinkle fish with salt, pepper, and 1 TBS of olive oil.  Roast for 15-18 minutes until the salmon is cooked medium.  While that is cooking, heat 1 TBS of olive oil over medium heat in a medium pan.  Add the shallot and cook for 3-5 minutes until soft.  Add the grapefruit juice, honey, and chipotle pepper.  Bring this to a simmer and cook until it is reduced by half.  Add the lemon juice and season with a bit of salt.  Once the fish is done, add the grapefruit segments and basil to the sauce.  Serve each piece of fish with the sauce over it.  Garnish with some fresh basil.  Enjoy!
