CEiMB: Marinated Flank Steak with Blue Cheese Sauce


This week's CEiMB recipe, marinated flank steak with blue cheese sauce, was chosen by Deliciously Golden.  It was the perfect opportunity to make a classic steak dinner with a couple healthy swap-outs.

We are not strangers to flank steak here.  My husband does a great job cooking this cut of meat on the grill.  The marinade was good, a bit sweet from the brown sugar and spicy from the garlic.  I loved the blue cheese sauce.  The flavor of this cheese is so strong it was able to permeate the buttermilk mixture so well.  The lowfat buttermilk added a ton of creamy texture too!  Definately a sauce recipe I will use again.  I think this is a must try dish, especially for a weeknight since it was so quick.  I served this alongside some cumin sweet potato wedges and roasted aspargus (I might have dizzled the blue cheese sauce over my potatoes too).  It was a great meal.  Enjoy!
