Scallops anyone?

I had a craving for scallops this week, broiled with a delicous topping.  I happen to find some great bay scallops at my local grocery too!



1 1/4 lb of fresh bay scallops
2 TBS (a splash) of dry white wine
1/4 cup of fresh parsley
1/2 TBS of unsalted butter
3 TBS of olive oil
1/2 chopped shallot
zest of 1/2 lemon
1/2 tsp of salt
1/4 tsp of coarse ground pepper
1/3 cup of panko bread crumbs

Preheat oven to 450 degrees.  Add wine to bottom of shallow over safe dish.  Rinse scallops under cold water and pat dry.  Add to baking dish.  In a mini food processor combine parsley, butter, oil, shallot, lemon zest, salt and pepper.  Stir into bread crumbs and cover scallops with mixture.  Bake at 450 for 12 minutes and then cook under broiler for 4 minutes for a crusty top.  Enjoy!
