Chipotle Chicken Tacos

I had some extra time this morning to put a classic in our house into the crock pot, Chipotle Chicken for tacos.  This has been served to entertain friends, as a Sunday lunch after church, and a quick week night meal.



2 cloves of garlic, minced
1 medium onion, minced
2-3 chipotle peppers in adobo sauce, minced
1 14oz can of diced tomatoes (low sodium)
3 TBS of tomato paste
1 tsp of ground cumin
1 tsp of driend oregano
4 medium boneless, skinless chicken breast

Combine everything in a crock pot and cook for 8-10 hours.  Once done, use two forks to shred chicken.  The chicken will have quite a bit of extra juice.  Serve in shells with cheese, fresh spinach, and guacamole.  Enjoy!
