Suffering Succotash!

Don't ask me why but I have been into succotash lately.  As a kid, I HATED lima beans but decided to give them a try in a classic succotash recipe.  Low and behold, I really like them.  Maybe my Mom wasn't so crazy after all... This recipe has become a quick addition to our weeknight line-up.


2 tsp of olive oil
1 small onion diced
1 green bell papper diced
3 small zucchini diced
1 cup of thawed lima beans
1/2 cup of thawed frozen corn kernels
1 14oz can of diced tomato
1/2 tsp of salt
1 tsp of Pirate Pepper Blend (a spice blend from Charleston, SC)

Saute onion and pepper in oil with 1/2 the salt and pepper blend.  Once tender, add the zucchini and the rest of the salt and pepper blend.  Add the lima beans, corn, and tomatoes.  Simmer for 5 minutes more.  Enjoy!

  5. That is funny. I've been thinking about succotash too. Who would have thought that would be the recipe to wake all of us up?
    I'm going to a vegan holiday cooking class on Sunday. Thought it would widen my cooking horizons as I tend to stay in my comfort zone. I'll tell you how it goes. p.s. I love lima beans.
