Balsamic Chicken with Spinach and Couscous

I tried a new recipe tonight.  It was from The Food Your Crave cookbook by Ellie Krieger.  It was quoted as being a great recipe for a quick dinner that satisfies.  Mission accomplished!  It took maybe 20 minutes to prepare and definitely met our needs on a Wednesday night.

I did make one alteration to the recipe.  Instead of wilting the spinach separately, I cooked it with the tomatoes and balsamic vinegar.  I was really happy with the recipe!  The best part is that is was under 400 calories per serving!
