This is one tasty bite! It is quick and easy to prepare. I also love that it is something different to snack on. This dip as great texture and bright flavor.
Edamame & Pea Dip
1 cup of frozen edamame
1 1/2 cups of frozen peas
1/2 red onion, chopped
2 garlic cloves, chopped
1 tsp of fresh thyme leaves
2 TBS of fresh parley
1/4 cup of nonfat Greek yogurt
1/2 tsp of salt
1/4 tsp of pepper
Place the edamame and peas in a microwave safe bowl with 1/2 cup of water and cover. Microwave on high for 4 minutes and strain. Place the edamame and peas in the bowl of a food processor. Add in the onion, garlic, thyme, parsley, yogurt, salt and pepper. Pulse to combine and then keep the processor running until a smooth consistency is achieved. serve with blue corn tortilla chips. Enjoy!
