Sweet Potato Stuffed Pork Chop

This was a quick dinner.  It has a really short list of ingredients and literally came together in a few minutes.  I love sweet potatoes and pork together.  It is no secret that I love goat cheese too!

This could be your dinner tomorrow!

I'm linking up with Real Food Weekly!  Check out the other recipes here.

Sweet Potato Stuffed Pork Chop

4 center-cut pork loin chops
1 cup of cooked sweet potato
2 oz of goat cheese
1/2 tsp of dried sage
1/4 tsp of salt and pepper
2 TBS of olive oil

Preheat the oven to 400degrees.  Season each pork chop with salt and pepper.  Mix together the sweet potato, goat cheese, and sage.  Slice a pocket into each pork chop.   Place 1/4 of the sweet potato mixture into each pork chop.  Try to push the stuffing in as much as possible to keep everything inside.  Heat the olive oil over medium-high heat in a large skillet that is oven safe.  Place the pork chops into the skillet.  Cook on each side for about 3 minutes or until they release easily.  After the second side has cooked for 2-3 minutes, place the skillet in the oven for 10 minutes.  Remove from the oven and tent loosely with foil for 3 minutes.  Serve alongside your favorite vegetable.  Enjoy!
