This is a really easy dish especially if you are the type of person where your perfect bite includes a little bit of everything!
The leftovers used include turkey, gravy, beans, and squash, I included my squash recipe below.
Leftover Shepherd's Pie
2 cups of shredded turkey meat, mix of white and dark
1/4 cup of gravy
3/4 cup of frozen corn kernels
1 1/2 cups of leftover green beans, mine were sauteed with shallots
2 cups of leftover squash, recipe below
In a 9" round baking dish, add the turkey. Stir in the gravy to coat the turkey. Then top with the corn kernels and beans. Spread the squash over top. Bake at 375degrees for 35 minutes or until the top is slightly browned. Serve alongside a simple salad. Enjoy!
Garam Masala Squash
1 large onion, sliced
1 tsp of salt
3 TBS of olive oil
2 TBS of Garam Marsala
1/2 tsp of fresh black pepper
2 medium butternut squash, diced into 1 1/2" pieces
2 cups of chicken broth
In a large pot, heat the oil over medium heat. Add the salt and the onions. Cook slowly for 10 minutes until soft but not brown. Add in the pepper and Garam Masala, mix well. Stir in the squash, be sure to each piece is coated. Add in the broth and bring to a simmer. Cover and let this cook for 45 minutes, stirring occasionally. Once tender, smash in the pot. Return to a simmer and cook, uncovered for 30 minutes. Enjoy!
too bad all our Turkey leftovers are gone! this Shepard's pie sounds delish.
