Baked Apples


I was home for a quick visit this weekend and got a chance to hang out  in the kitchen with my Mom.  

I love this time of year where no New England table is complete without an apple dish.  This goes together quick and it is a little more healthy than say our family favorite, Apple Cake.  

Baked Apples

3 apples, cored with top removed but bottom left intact
1/8 cup of brown sugar
2 TBS of unsalted butter
1/8 cup of rolled oats
1/8 tsp of nutmeg
1/4 tsp of cinnamon
2 TBS of sunflower seeds
1/4 cup of raisins
1/8 tsp of salt

Place the apples in a small baking dish with about 3/4 cup of water in the bottom.  In a small bowl cut together the brown sugar and butter.  Once it resembles wet sand, add in the remaining ingredients.  Place an equal amount of the raisin mixture in and on top of the each of the apples.  Be sure to pack it into the center.  Bake at 350 degrees for 50-55 minutes.  Enjoy!

  1. Well...on apples. I tried the skillet apple crisp from the magazine. Awesome! The pecans add wonderful flavor to the topping. I must remember that it contains 7 apples and 8 TBSP of butter (of course I used margarine) so it can not be consumed in two days! Next time I'll make the whole recipe when we have guests! Thanks Liz!
