Grilled Salmon with Tzatziki


We love salmon on the grill, simply seasoned.  It is a go to dinner here.  I love to have a sauce or a salsa with salmon.  It is such a great template for strong flavors.  I thought this simply and healthy tzatziki would go perfectly.  I thought the bite from the garlic and lemon zest was balanced well by the cucumbers and yogurt.  

Tzatziki

3/4 cup of nonfat Greek yogurt
zest of one lemon
1/4 tsp of fresh ground black pepper
1 garlic clove, minced
1/4 cup of English cucumber, finely chopped
2 TBS of fresh mint, chopped

Mix the ingredients together.  Use to top grilled fish or as a dip.  Enjoy!
