Pulled Pork Sandwiches


My father and brother love a good sandwich.  I made this dish for them when I was home recently.  It was perfect...can I say that?  My Mom found these amazing fresh rolls from a local bakery that soaked up every ounce of sauce.  Try them!  Do it soon!

Pulled Pork Sandwiches

4 lb pork roast, chopped into 2 inch pieces
1 onion, diced
3/4 cup of good ketchup
2 chipotle peppers with 1 tsp of adobo sauce, minced
3 garlic cloves, minced
1 TBS cumin
1 TBS of paprika
1 tsp of chili powder
1/4 cup of cider vinegar
2 TBS of brown sugar
2 TBS of tomato paste
1 bottle of a good Lager
1 tsp of salt
1/2 tsp of fresh cracked black pepper

To a large Dutch oven add the pork and onions.  In a medium bowl mix all the remaining ingredients.  Before adding it to the pork check for seasoning.  Slowly add to the pot and carefully stir to combine.  Place in a 300degrees oven for 4 hours.  Remove from the oven, shred the meat using two forks, and stir well.  With the oven turned off, return the pot to the oven for 30 minutes before serving.  This will help the meat to reabsorb as much of the sauce as possible.  Serve with soft rolls and plenty of napkins.  Enjoy!

  1. That looks really good! I love smokey, slightly spicy barbecue sauce, and this sounds perfect with the chipotle in adobo sauce.
