Make BBQ chicken pizza of course! I used whole wheat pizza dough, smoked mozzarella, and a quick tomato sauce. The flavor combination was fantastic, especially the chipotle chicken with the smoked mozzarella. Add a glass of wine and it is a perfect Monday night dinner.
Quick tomato sauce
2 TBS of olive oil
1 small onion, finely diced
1/2 tsp of salt
1 garlic clove, minced
1/2 tsp of red pepper flakes
1/4 tsp of dried oregano
1/4 tsp of fresh ground black pepper
1 14oz can of no salt added diced tomatoes (Muir Glen)
1 TBS of tomato paste
Heat the oil in a small sauce pan over medium high heat. Add the onion and salt, cooking for 2-3 minutes and then add the garlic. After 1-2 minutes, add the red pepper flakes, oregano, and pepper. Once the garlic and onion are soft, add the tomatoes and tomato paste. Combine well and let simmer for 10 minutes. Enjoy!
