This was a big hit in the house. We had it for lunch after we each had a hard training ride. I was surprised too because my husband likes classic flavors. I was concerned that the curry and the almonds was going to tank this recipe. Shockingly, he loved it! I really liked the crunch of the almonds and scallions. I think the grapes would have added too much sweetness which it why I swapped them out for almonds. Give it a shot! Enjoy!

CEiMB: Curried Chicken Salad
This week's recipe, curried chicken salad, for CEiMB was chosen by Sarah. I was excited to try the recipe for a bunch of reasons. We have been rediscovering curry in my house lately. I am not a mayo fan so the idea of using non-fat yogurt instead was appealing. I have always loved chicken salad! Yum!
