Fish tacos



Simple Recipe for Fish Tacos
1.5lbs of Cod
3 TBS Cajun Seasoning
2 tsp of olive oil
1 avocado sliced
1 14oz can of Muir Glen Fire Roasted Tomatoes, drained
4 scallions sliced
1 jalapeno finely diced
3 TBS of chopped fresh cilantro
1/4 tsp of salt
1/4 tsp of black pepper
4 whole wheat tortillas
Preheat broiler.  Pat fish dry and top with cajun seasoning and olive oil.  Cook under broiler until flaky and opaque. Combine tomatoes, scallions, jalapeno, cilantro, salt, and pepper. 
Build the taco in a tortilla using about 1/4 of the fish, with 1/4 of the avocado, and salsa.  Enjoy!

  1. Liz, taco are suppose to beef, pork or as a last resort chicken.
